Pepper Steak and Red Potatoes

This is an easy recipe that I enjoy making.  This is a low-calorie and low-fat meal.  Of course, it can be made in a crockpot (that’s my preferred way of cooking).

Ingredients:

  • Round steak
  • 6 medium red potatoes
  • Pepper blend consisting of: green, banana, onions, and red peppers
  • 2 tablespoons of basil
  • 1 tablespoon of peppercorn
  • 1 package of Lipton (beefy onion variety)
  • 1 can of fat-free beef broth
  • 1 teaspoon of margarine OR olive oil

Directions:

  1. Brown the steak in a skillet.
  2. Cut the red potatoes into smaller pieces.
  3. Add basil w/ butter, or olive oil.
  4. Add one package of the pepper blend.
  5. Add the sliced strips of steak.
  6. Add peppercorn.
  7. Add Lipton mix and broth.
  8. Cover and cook on high for 4 hours.

Serve with green beans, or steamed broccoli.  When plated, it is really stunning.  Feel free to add the peppers later, if you prefer your peppers extra-crisp.
